Roast to Order: Why we roast only after you place your order

The freshest coffee isn't the one sitting on a shelf. It's the one that has just been roasted.

If you've spent any time exploring the world of specialty coffee, you've probably come across the term Roast to Order. It's a philosophy embraced by an increasing number of specialty coffee roasters around the world: coffee isn't roasted to sit on a shelf waiting for someone to buy it. Instead, the roasting process begins only after a customer places an order.

At Earth Coffee, we believe every coffee deserves to begin its journey at exactly the right moment. That's why we don't keep large quantities of roasted coffee sitting in storage. Instead, we roast every order as close as possible to its shipping date.

Simply put, your coffee is roasted exclusively for you.


What does "Roast to Order" really mean?

Roast to Order means that green coffee is carefully stored under ideal conditions until the moment you place your order.

Only then do we select the appropriate roast profile, roast the coffee, allow the natural Degassing (Degas) process to begin, package it in a one-way valve bag, and ship it almost immediately.

This approach prevents roasted coffee from sitting in warehouses or on shelves for weeks or even months, where it gradually loses part of its aroma, sweetness, and complexity.


Roasting is the beginning of the journey

Many people believe coffee is ready to brew the moment roasting is complete.

In reality, roasting marks the beginning of a natural evolution. During the first few days after roasting, coffee beans slowly release carbon dioxide through a process known as Degassing (Degas).

The amount of resting time a coffee needs depends on the coffee itself and, most importantly, on its roast level. A light roast generally requires more resting time than a medium roast, and as a general rule, the lighter the roast, the longer it takes to fully express its character.

That doesn't mean extremely fresh coffee is a disadvantage. Quite the opposite. It means your coffee will continue to evolve naturally over the following days, gradually revealing its full aromatic and flavour potential.

Roasting isn't the end of coffee's journey. It's the beginning of the countdown.


Why do we choose Roast to Order?

The answer is simple.

Green coffee can be stored for a long time under the right conditions. Roasted coffee, however, begins losing some of its precious aromatic compounds from the very first day.

A single origin coffee can contain dozens of delicate flavour notes: flowers, citrus, chocolate, caramel, tropical fruits, or spices. Our goal is to make sure as many of those flavours as possible reach your cup.

That's why we always recommend freshly roasted coffee and, ideally, whole bean coffee. Whole beans preserve aromas and flavours far better than pre-ground coffee, while grinding just before brewing delivers the freshest and most vibrant cup possible.
