Coffee is a seasonal fruit, and each origin follows its own harvest cycle shaped by climate, altitude, and rainfall. From flowering to cherry development and harvest, this natural timing defines a coffee’s peak flavor potential. After harvest, the beans are processed, stabilised and shipped, meaning coffees from different regions arrive at the roastery at different times throughout the year.
Because of this, we rotate our menu to match these staggered arrivals, releasing each coffee at its peak vibrancy rather than holding a fixed lineup. Even under ideal storage, green coffee gradually loses its brightness, aromatics, and sweetness, so seasonal sourcing ensures every coffee is presented at its most expressive, delivering a fresher and more authentic cup.
