About the Farm

Gargari Gutity coffee originates from Ethiopia’s southern Gediyo zone, specifically the Gedeb Wereda, Banko Gutity Kebele, located about 22 km from Gedeb town. Grown at elevations around 2,300 meters, the farms benefit from ideal high-altitude conditions that support exceptional coffee quality.

Processing takes place at a 2.5-hectare washing station equipped to handle Fully Washed, Natural, Anaerobic, Honey, and Carbonic Maceration methods, allowing for a wide range of flavor expressions in the final cup. The coffee they cultivate is the JARC74110, which genetically is part of Heirloom landrace variety, known for its refined aromatics and clean, complex profile. The Gutity River supplies water for processing, adding a distinctive terroir influence.

The washing station features 180 drying beds and open-air fermentation tanks, enabling optimal drying and fermentation. The coffee is cultivated and delivered by a community of 2,400 dedicated farmers whose expertise and consistency ensure the high standard of Gargari Gutity.

About the Coffee

The traditional Ethiopian Natural process dries coffee cherries in thin layers on raised beds under direct sunlight. The Supernatural method, by contrast, dries much thicker layers of cherries inside a semi-permeable chamber that reduces sunlight exposure while allowing controlled airflow. This slower, extended drying deepens natural sugar fermentation. Throughout the process, temperature, Brix, and moisture are closely monitored, with airflow and heat adjusted to ensure uniformity and prevent over-fermentation or mold. This approach brings out remarkable depth, clarity, and fruit-forward intensity. Cherries are hand-selected at 18–22° Brix, shade-dried in dense fermentation piles, then moved into cocooned night-drying before undergoing a prolonged period on raised beds. They are carefully tended until reaching 10–12% moisture, then stored in their dried pods to preserve their vibrant character.
